Refreshing bitter grapefruit note

Grapefruit has something lemon and orange do not — bitterness. That specific naringenin bitterness that holds the tongue in attention for a full minute after swallowing. Combined with juniper that itself has that dry-herbal seriousness, you get a gin that does not resemble a fruit cocktail but a drink consumed with pride as the sun sets.

We use both the peel and the white pith of the grapefruit — that white, bitter membrane between the peel and the fruit that is discarded in the kitchen, here it is precious. Together with grapefruit blossom and juniper, we recommend Fever Tree Aromatic Tonic Water for the most complete experience. Also excellent as a base for Paloma cocktails.
